Pascal Jolivet is one of the most dynamic winemaker in the Loire Valley - crafting elegant wines since 1987. Pascal specialises in the wines of Sancerre and Pouilly-Fume which have very quickly gained a leading position with the Michelin-starred restaurants throughout France. The vineyards of Sancerre are situated 200km to the south of Paris on gently slopping countryside between 200 - 400 meters above sea level. 


The Loire River and the surrounding forest create a relatively mild micro-climate for the vines. The philosophy of the estate is to allow nature to take its course, as much as possible. The grape juice is fermented naturally, without adding cultivated yeasts in conjunction with thermo-regulation. The fruit parcels from each unique site are fermented separately so as to allow the terroir to fully express their differences and subtleties.
Each parcel of grapes is vinified separately in stainless steel tanks, fermenting slowly to allow the natural yeasts to emphasize their character. Fermented at cool temperatures rather than cold and left on their lees for four to six months to achieve subtle but complex aromas.
This Sancerre is a composite of the three soil types in the district: calcareous clay, limestone, and flint. Les Caillottes makes up 50% of this classic Sancerre Blanc, with Les Terres Blanches representing 30% and Silex with 20% of the blend.
In the glass you have a pale straw coloured wine. On the nose subtle aromas of leafy green herbs and mineral notes. On the palate a wine with true style marked by richness, elegance and smoothness. This Sancerre wine is mouth-filling and presents a perfect balance of crisp green fruits and fresh herbal characters, also expressing minerality and finishing clean and dry. Chill and serve at 8-10ºC.
