Grape Varietal: 100% Chardonnay
Growing Region: Chablis, France
Chief Winemaker: Grégory Viennois

In July of this year, I had the pleasure to spend the day with the talented team at Domaine Laroche. Visiting several of their specific vineyard sites across the region. Along with a full range tasting held in the 'Obédiencerie', which is the former monastery, cellars and now their head-office and tasting room. The cuvée Saint-Martin is actually a blend of the best parcels of Domaine Laroche in the Chablis appellation across 60ha of vines.

Each site is located on Kimmeridgian soils and these varied aspects provide numerous nuances, along with a richness and complexity found in the final wine. Hand harvesting and sorting were crucial for quality during what was a demanding 2013 growing season. The unique profile of each terroir is still clear and the wine has harmony and typicity that one expects with wines of Chablis. All of these elements and conditions enabled the development of elegant aromatics, well-balanced fruit and mineral notes in the wine.
When each selected parcel was ripe, the team brought to the winery whole bunches which were placed into a pneumatic press; the juice was then allowed to settle for approximately 12 hours at 12-15°C in specially designed, wide tanks in order to increase the natural sedimentation. The juice then underwent 21 days of fermentation at 17°C in stainless steel tanks and then 8 months on fine lees. The wine had minimal filtration to preserve the maximum natural character of the wine.
In the glass you have a pale gold colour with a shining hue. The personality and character of this wine comes directly from the fruit parcels and not from any oak. The flavour profile has a confident fruit expression and a rich aromatic nose, both typical of Laroche. The wine has a vibrant nose with hints of ripe, white pip-fruits and floral notes. These carry through onto the palate which has a balanced richness and freshness from its natural zesty acidity and mineral seam - resulting in a lingering, refreshing finish. Chill and serve at 8-10°C.

An aromatic, fresh and expressive Chablis.

Drinking perfectly well this summer season; and over the next 3-4 years.

Perfect wine pairing with natural oysters, saffron-scallops, fish carpaccio, pork cutlets with apple sauce and a chicken salad, enjoy.
