Grape Variety: 100% Riesling
Growing Region: Waipara Valley, New Zealand
Chief Winemaker: Simon McGeorge

With such a stunning summer period and the availability of so much varied fresh shellfish and seafood - what better complementary wine pairing than a glass or two of Riesling. New Zealand has developed a deserved respect from wine enthusiasts around the globe for its expressions of Riesling. Though to be honest, only a select few locally are fully enjoying them on a regular basis. The rest are definitely missing out on something special.

Waipara Valley and more so Waipara Hills are one of the most outstanding and consistent exponents of Riesling in New Zealand. The fruit for this wine was sourced entirely from ‘The Mound’ vineyard in the Waipara Valley, where the vines are planted on a layered bed of mixed clays and soils which adds complexity to this wine.
Due to mixed and drawn out 2014 growing season - the harvested fruit had lower acidity than previous vintages, though great flavour ripeness, producing fruit of ideal quality to craft a Riesling with character.
The different parcels were harvested primarily in the morning or at night - then on arrival into the winery were pressed immediately to preserve the fruit flavours. No sulphur was added to promote some colouration, and rested for a short period to soften phenolics. The juice was left to settle until clean, racked and then gently warmed to invigorate a range of selected yeasts chosen to develop palate texture. After fermentation the wine was left on its lees for three months, and stirred weekly to keep the wine fresh and promote palate characters. Finally each of the parcels were tasted then blended, fined and finished ready for bottling.
As the wine fills your glass, you are greeted by a bright pale green colour with a citrus hue. On the nose this wine is bursting with citrus aromatics, along with rock melon, floral notes and a touch of lemongrass and white honey. These characters and flavours carry onto the generous palate - which has a heart of mixed citrus flavours and a touch of white honey which fills the mouth and the balanced natural acidity and residual sugar results in both a persistent and refreshing finish. The finished wine has 12% Alc - gently chill and serve at 7-9°C.

A generous white wine with an elegant and refreshing finish.

Drinking perfectly well this summer season; and through until the end of 2016.

Perfect wine pairing with fresh shellfish, steamed fish with a lime dressing, fish cakes and a citrus dipping sauce and a summer salad, enjoy.
