This is the nineteenth release of Tim Adams ‘The Fergus’ - which is named after his neighbour who was kind enough to sell Tim his Grenache grapes in the 1993 vintage, during a desperate shortage of Shiraz and Cabernet. Tim quickly realised that a new wine was born from necessity and fruit quality, crafting a wine with a medium-full palate, approachable and enjoyable in its youth and immediately food friendly.

 

The Grenache grapes, which were left to hang until fully mature, were crushed on to the fermented and drained Tempranillo skins. Fermentation lasted approximately one week, and then the tanks were topped and closed for another week for further maceration prior to pressing the juice off skins. A significant amount of Tempranillo and a more modest amount of Malbec were added for layered complexity and lifted fruit expression.
Each fermented parcels were then racked, filtered and transferred to a mix of used French and American oak hogsheads. The wine remained in oak for 24 months before final blending, filtration and bottling. The wine has not been cold stabilised and so if stored in cool conditions may form harmless wine diamonds in the bottle.
As you pour this wine into your glass you will be greeted by a deep red and with a purple, crimson hue. Raising from the glass this wine has lifted red berry aromas, spice and earthy essence infused with dark summer fruits. These notes carry through onto the palate complemented by ripe Grenache characters, sweet berries with spice and the structure and lifted fruit flavours of the Tempranillo keeping the palate vibrant.
The Malbec component adds mid palate richness and flavours of dark berries, violets and subtle lavender notes. The wine engages all of the palate, along with its well integrated tannins, oak characters and its 14.5% Alc gives this wine a lingering smooth finish. Decant for 20-30 minutes and serve at 16-18°C.

CELLARING POTENTIAL:
Drinking perfectly well this coming season; and will mature gracefully for another 5-6 years.
