For a number of years I have been enjoying the wines crafted by the talented team at Chapel Hill. They strive and achieve to produce wines which display purity in regards to varietal integrity and vineyard site location, wines rich in character with balance and drinkability. This 2013 Cabernet has an engaging mouth feel and texture with alluring complexity and structure able to pair with a diverse range of cuisine and for those with patience the ability to age.


Michael and his teams’ mantra for their red wines; is to achieve power and grace, harnessing the opulence that McLaren Vale is renowned for and incorporating both style and poise.
To achieve the personality of this 2013 ‘Parson's Nose’ Cabernet expressing true varietal flavours, the grapes were strategically harvested over a period of time to avoid any green tannins or overripe fruit flavours. They used open fermenters which were regularly plunged daily and allowed to remain on skins for up to 9 days to ensure the optimum extraction of flavour and tannin structure. The wine was then basket pressed, with the free run and pressing fractions being combined. The wine was then transferred to tight grain French oak barrels for development and maturation. During this maturation period the wine was regularly racked to encourage the integration and mellowing of the energetic youthful tannins.
Dark berries, currants and mint chocolate notes introduce a smooth, medium-weight vibrant red wine with an approachable personality, balance and soft tannins. This 2013 'Parson's Nose' Cabernet Sauvignon has a full and engaging character, displaying expressive and alluring aromas followed by a richly flavoured palate. The wonderfully structured palate is both eloquently pure and thoughtfully complex, and is further supported by an array of intricately fine tannins which are both pleasingly savoury and defiantly persistent.
This vintage has Alcohol: 14.5% Alc. Decant for 30-45 minutes and serve at 16-18°C.

With decanting approachable this season; and will age gracefully for 10-12 years. 

Perfect wine pairing with medium rare prime steaks with horseradish and roasted vegetable, beef pie or with aged hard cheeses and fruit chutney, enjoy.
