The wine pays tribute to Yarra Valley’s very own opera diva, Dame Nellie Melba, who enchanted the world as Mimi in the opera ‘La Bohéme’ - based in the Latin Quarter of Paris-France in the 1880’s. The Yarra Valley has a rich history of quality wine production dating back over 150 years. The region has a cool climate; marginally warmer than Burgundy but cooler than Bordeaux, with well-structured soils ideal for viticulture and in this case Pinot Noir.

 

This 2015 La Bohéme’ dry rosé is made from predominantly Pinot Noir with a dash of other pink and aromatic varietals. The 2015 growing season in the Yarra Valley was relatively mild, with good spring rain and was fairly dry in February and March during harvest. The harvested fruit was in good condition, with excellent colour and flavours. Their selected vineyards produced fruit with excellent personality and character for this rosé wine.
When deemed ripe the fruit parcels were harvested and brought quickly into the winery and pressed immediately. Steve and his team were looking for lots of aroma and bright flavours in the juice. The pink juice was settled overnight and racked to small casks and allowed to ferment with indigenous yeasts. The casks had a small amount of lee stirring at the end of fermentation and then underwent a complete malolactic fermentation to give a creaminess and complexity to the mid-palate.
In your glass you will have a pale coral-salmon pink colour. On the inviting nose you will be greeted by classic wild strawberry characters, hints of marzipan and gentle aromatics of subtle floral notes. This is a refreshing rosé wine, very European in attitude and style and downright delicious to drink during the coming summer months. This pale salmon coloured Yarra Valley rosé has a lively moorish palate, filled with small wild strawberries and pink watermelon flavours, supported by vibrant, natural crispness and a pleasingly long and lifted finish.
This dry style Pinot Noir Rosé has 12.7% Alc. Gently chill and serve at 8-10°C.

CELLARING POTENTIAL:
Drinking very well this summer season; plus will age nicely for another 18-24 months.
