For those familiar with Chapel Hill wines - there is no spelling mistake, but a slight name change. Now called ‘The Parson’ and a smart new label for a classic style McLaren Vale Shiraz from Michael and the team. The Parson replaces the wines you knew as the ‘Parson’s Nose’. Michael and Bryn Richards (senior winemaker) use ‘The Parson’ range to showcase the diversity of flavours and varietal character found across the McLaren Vale.

 

Their vineyards are grown in shallow soils layered over limestone - with each site influenced by the maritime climate, with vines being located in a triangle between; McLaren Vale, Maslin Beach and also around Bowering Hill.
To craft this medium to full, varietal, terroir expressive wine - when it came time for harvesting the grapes were strategically picked to avoid any overripe, jammy flavours. The subsequent ferments were handled gently and each parcel allowed to remain on their skins for up to 8 days to ensure ideal extraction of berry flavours and natural tannins.
Each ferment was then gently pressed with the free run and pressing fractions combined. To express and retain varietal typicity, along with showcasing the wines complexity Michael used only well-seasoned tight grained French oak barrels during the maturation process. During this period the wine was racked regularly to encourage the integration and softening of the wines natural youthful tannins.
Their respectful and focused winemaking has resulted in a vibrant McLaren Vale Shiraz providing explosive aromas of blueberries, liquorice, violets and spiced chocolate on the nose. The subtle use of French oak has produced a wine with finesse and a wonderful tannin structure which showcases the natural ripe dark fruit flavours.
The luscious medium to full bodied wine expresses ripe, dark plum flavours seamlessly integrated on the palate with smooth textured oak notes and engaging velvet tannins. The added length and savoury characters on the mid-palate, along with the use of soft French oak barrels has resulted in this 2014 ‘The Parson’ Shiraz with a lingering and beguiling finish.
This Shiraz has 14.5% Alc. Decanter for 30-60 minutes and serve at 16-18°C.

CELLARING POTENTIAL:
With a period of decanting approximately 45 minutes - drinking well this season; and will age nicely for another 5-6 years.

Perfect wine pairing with rare beef, seasoned lamb chops, spicy kebabs, classic pizzas, chorizo pastas and earthy vegetarian dishes, along with mature, hard cheeses - enjoy.
