I last caught-up with Jean-Claude Mas back in 2014 at his winery, where I had the pleasure to spend a few days visiting the vineyards. Which have been selectively planted along with chosen growers across the Languedoc wine region of southern France. Jean-Claude has blazed a trail across the region and around the world with his dynamic wines and business acumen - since taking the helm of his family’s estates back in 2000.

 

His driving mission has been to craft quality, accessible wines with a modern, New World flair. Making wines with authenticity, charm and with personality which express their unique terroir. The Paul Mas varietal range of ‘single vineyard’ wines are made with the highest quality grapes cultivated on vineyards in the Domaines de Nicole and Château du Conas estates.
The fruit for this wines is sourced from their ‘Savignac’ vineyard - which is located on the hillsides of the Hérault overlooking the Mediterranean Sea just a short distance away. This unique site is ideal for growing Carignan grapes, being able to attain physiologically ripeness. Some of their mature vines are over 50-years old, and have a natural balance with the terroir. Once each site is deemed ready for harvest - Jean-Claude and his dedicated team use a relatively hands-off approach to winemaking, not wanting to lose or dilute any of the natural varietal and site characters in the finished wine.
This wine has seen a controlled amount of exposure to oak, used as a supporting ingredient than a focus in this approachable red wine. Having spent 6 months in American oak barrels, with only 20% being new oak.
In your glass you will have a rich red colour, with a crimson hue. On the nose, you will be enticed with spices and ripe blackberries along with violets and a hint of cocoa and toasted oak notes. These varietal aromas carry through onto the plate - along with complementary flavours of wild cherries and subtle tobacco. A full, rich and mellow wine, with delicious berry flavours and chocolate highlights all supported in a well-structured wine with integrated tannins and complex flavours which linger on the pleasingly smooth dry finish.
This 2014 Paul Mas Carignan has 13.5% Alc. Decant for 30-45 mins and serve at 16-18°C.

CELLARING POTENTIAL:
With a short time of decanting, this wine is drinking well this coming season; and will age nicely for another 4-5 years.

Perfect wine pairing with grilled and bbq’d red meats, mild game dishes, seasoned pizza’s & pasta’s, along with aged, hard cheeses, enjoy.
